well, salmonella categorized under the acid-sensitive bacteria that cause the infection of GIT tract.
one way of the salmonella get protected is through “food” like minced meat or through eggs white. it helps to increase the pH(temporary) of the surrounding liquid and allow the salmonella to survive in the stomach and then safe itself from the phagocytosis and complements system and then attach to the mucosal surface of the intestine and make the surface rough and then cause disease.
