personnel hygiene is very important to reduce bacteria in food like washing of hands, head covers, clean clothes prevent bacteria. also proper washing of vegetables is also very important, steam the vegetables, cut the vegetables with sterile knives or other apparatus, preserve and store vegetables in clean place at proper temperature and pH.
