salt solution dehydrate the bacterial cell by the process of osmosis, in which water from bacterial cell comes out to balance outer salt solution environment. due to dehydration bacterial proteins like enzymes will not work properly and bacterial cell dies. but this is not effective against all bacteria like halotolerant that can tolerate salt e.g. staphylococcus.
