Fermentation is the process in which microbes break down the nutrient from the environment to get energy. this process is specific for the bacteria species. Majorly, bacteria ferment carbohydrates present in their surroundings. Polysaccharides are broken down into small monosaccharides and microbes give energy from this catalysis. Acids and gases are produced in this process that is responsible for the identification of bacteria. Acid production is checked by using pH indicator while gas production is checked by using Durham’s tube. This fermentation process depends on the physiology of bacteria. Enzymes are present in the bacterial cell to catalyse the long polysaccharides into small monomers. Every bacteria have a different fermentation profile. This fermentation profile is used for the identification of bacteria. acids and gases are produced in this process that is responsible for the identification of bacteria.
Salmonella is a gram-negative rod-shaped bacteria. They are facultative anaerobes that can survive in the absence of oxygen. They are motile and non-spore forming. Salmonella is able to ferment glucose, sucrose, mannitol, and sorbitol. Their fermentation process produces acid and gas. They produced mainly H2S that gives black color on triple sugar iron agar.
